An HDMI in/out interface isn't important.
The two sound projectors I am familiar with (Yamaha and Polk) do not have HDMI inputs. The Polk uses an external amp/receiver while the Yamaha (See link) has RCA and optical/digital coax connections to the built in amp to allow connection of a DVD player, cable or satellite box, TV, etc.
HDMI is a single connection which carries both multichannel digital sound and digital video, so in theory you could put one on a sound projector ... but it would be overkill since the video portion would be ignored.
You also will usually not have an output since the sound projector is the output device (it's a speaker after all , and you don't see output jacks on speakers!).

The projecors name is Optoma HD200X and I'm planing to use it for gaming and movies.
So I have two gaming machines one of them is a wii the other is a ps3 so I need a sound system with atleast two HDMI entrance and one exit, one component cable and one exit if I can't send the signals going in through the component cable through the HDMI cable if i can I'm also wondering if I can do the with a Scart cable.
So a lot of text I'm wondering if you know any soundsystems with all of this good sound, price around 500 $ and if you've got any suggestions on another Projector let me knoe please

Well, $500 for a good sounding sytem is cutting it a bit thin. If you need at least 2 HDMI inputs, you are looking at at least $300 for a decent receiver. That ony leaves you with $200 for speakers. Unfortunately, since speakers are the most inefficient aspect of a sound system, cheaping out on them will make a decent receiver sound like crap.
I would recommend waiting until you have a little bit better budget. Say around $700. Then you will have closer to $400 for a decent 5.1 speaker system to compliment that decent receiver.
Check into Denon and Yamaha receivers. Denon's AVR 1610 isn't a bad receiver for the price.
