I am looking for a new projector for my home to replace the previous one. My last was always hard to see during the day so I would like my next one to be bright enough so I can watch whenever I like including daytime. I know brightness for projectors is measured in lumen so I was just wondering how many would be needed to be able to watch in ambient light conditions.

This depends on so many factors that I can't see from here: How much ambient light? Where does it come from, relative to the screen location? How large is the screen? How much brightness do YOU find sufficient? How bright was your last projector?
Take the lumen output of your old projector, and multiply by how many times brighter you want your image.

I have recently begun revamping my desk space when I remembered an article on Gizmodo from about a year ago, mentioning a set of USB connected ambient light projectors. I couldn't find the article. Is there anything out there like this that you can suggest?
All I got from that 'Ambient Light Projector' search was actual projectors, which I don't need lol what I am looking for is something simple to give my computer ambient lighting that matches whats onscreen. (Video games, movies, etc)
